Tasting notes

This unique Metodo Classico Moscato “Doro” shines in the glass with a pale straw yellow colour and a fine, elegant yet present mousse.
The bouquet is intense yet refined, with floral notes of peach, orange blossom and white sage, complemented by subtle hints of ripe white fruit.

On the palate it presents itself as a delicate and balanced wine with a light, creamy structure thanks to ageing on the lees. The taste is lively and fresh, with a subtle touch of the grape's natural sweetness. All of this gives the wine a long, fruity and floral finish.

Vinification

A unique Moscato d'Asti, of which only 1,000 bottles have been produced.

After the harvest, the Moscato Bianco undergoes cryomaceration: a short cold soak of 8 to 10 hours at 2 to 3 °C. This process extracts the most refined floral and herbal notes from the skins without adding bitterness. The grapes are then gently pressed, so that only the purest juice is used.

The first fermentation proceeds slowly at low temperature (14 to 16 °C) in stainless steel with native yeasts. After about fifteen days the wine reaches 7% alcohol and fermentation is stopped by chilling to 0 °C, preserving a subtle residual sweetness.

In spring the second fermentation follows in the bottle, lasting six months. The wine then rests for a further 24 months on the lees (sur lie), which gives it a silky mousse, extra depth and a creamy texture. No malolactic fermentation takes place, so the wine retains its fresh, lively character.
