Tasting notes
In the glass this is a deep ruby red wine, with notes of ripe cherry and pomegranate and floral notes of jasmine and hibiscus.
The wine has an elegant structure with firm tannins and good balance. The fresh acidity gives the wine liveliness, with mineral and earthy undertones that highlight the influence of the amphora.
Vinification
Vinification
Vinification in ceramic amphorae: tradition and purity united
Vinification begins with a long maceration of 25 to 40 days in ceramic amphorae. Only natural yeasts native to the grapes are used during this process, so the wine comes to life in a pure and spontaneous way. This method respects the integrity of the grape and fully expresses the character of the terroir. After fermentation the wine matures for 18 to 20 months in ceramic amphorae. This slow maturation creates a soft, elegant structure and lets the wine develop at its own pace. This is followed by 6 months of bottle ageing, during which the wine further rounds off its balance and refinement. The wine has an impressive ageing potential of 8 to 10 years.
Serving temperature
