Tasting notes
Tasting notes
In the glass this wine shows a ruby red colour with notes of cherry, raspberry, red plum and medicinal herbs, grass and hints of eucalyptus.
On the palate it is warm, with a lovely structure, lively freshness and soft tannins.
The finish is spicy, beautiful and elegant, a pure reflection of the Roero hills.
Vinification
Vinification
After the hand harvest in October the grapes are carefully selected and undergo an authentic vinification that respects tradition.
Fermentation begins with maceration in horizontal fermentation vats, at a controlled temperature that never exceeds 30°C. Only natural yeasts native to the grapes are used. This approach produces a wine that expresses the character of the grape and the terroir in a pure way.
Ageing and refinement
After fermentation the wine matures for about 6 to 12 months in large oak barrels (botti di rovere). This gentle oak influence gives the wine structure and elegance without overpowering the fruit. The wine can easily be cellared for 6 to 7 years, during which it continues to develop in complexity and balance.
Serving temperature:
Preferably serve at 18°C to bring out the aroma and structure at their best.
