Tasting notes
Tasting notes
On the first sip the wine is juicy and silky, with notes of citrus fruit and a hint of chamomile, wildflowers, ripe peach and vanilla. Over time, subtle hints of brioche and a light minerality emerge, adding to its complexity. The fresh acidity and creamy texture are supported by a fine and persistent mousse with a long finish.
Vinification
Vinification
Tradition and elegance in every bubble
The grapes are first gently pressed to obtain only the most refined juice. The first fermentation takes place at a controlled temperature of 18°C, using exclusively natural yeasts native to the grapes. This results in a pure and authentic base wine.
Second fermentation in the bottle: Méthode Traditionnelle
After the first fermentation, the wine undergoes a second fermentation in the bottle, according to the traditional method (metodo classico). This process lasts 8 to 10 years, allowing the wine to develop into a complex and refined sparkling wine with fine bubbles, depth and elegance.
Serving temperature
For the best tasting experience, it is recommended to serve the wine between 5 and 8°C.
