Tasting notes

In the glass a refined golden yellow colour shines, with a subtle, lively perlage. The bouquet opens with delicate aromas of ripe peach, candied citrus and white flowers, interwoven with notes of roasted hazelnut, brioche and a hint of honey. On the palate it is silky and rich, with a layered structure: ripe stone fruit, fresh citrus notes, a light spiciness and mineral accents that elegantly support the whole. The exceptionally long ageing adds nuances of dried fruit, vanilla and a touch of marzipan, while the refined acidity ensures a lively and seemingly endless finish.

Vinification

Endless softness born from the classic method, where an exceptionally long ageing translates into pure refinement. Every sip reveals an impressive breadth and depth that never cease to surprise.

The grapes are harvested by hand at the perfect moment of ripeness, then gently pressed to obtain only the most refined juice. The first fermentation takes place in stainless steel tanks at a controlled temperature of 18°C, using exclusively the estate's own natural yeasts. This preserves the pure expression of the grape variety and the unique terroir.

This is followed by the second fermentation in the bottle according to the classic method, for no less than 25 years “sur lie”, an exceptionally long period that brings outstanding complexity, depth and elegance.

Serving temperature:

For the best experience, it is recommended to serve this wine between 8 and 10°C.
