Tasting notes
Tasting notes
Elegant and structured with an intense colour, a complex aroma and a wide olfactory palette that ranges from fruity notes to delicate and even floral secondary scents, complemented by spices, chocolate and butter. The evolution in the glass offers a continuous taste experience. Extremely complex, it is an attractive wine with a great longevity.
Vinification
Vinification
This Barbaresco is the result of a careful selection of grapes from the Campo Quadro vineyard, located in the San Cristoforo subzone in Neive. Fermentation takes place spontaneously with indigenous yeasts, and vinification follows special techniques. A tumultuous fermentation phase takes place with a fully submerged hood, after which the wine is briefly aged in new wood, followed by periods in wood of different ages, characterized by frequent blends that provide a pleasant and balanced wood influence. The ageing in wood is not constant, but depends on the characteristics of the vintage and the product itself, and varies from a minimum of fifteen to even thirty-six months. Bottling takes place under favorable conditions, followed by a long ageing in bottle, equal to the ageing period in wood, before the wine is marketed.
