Red vinification with natural yeasts. Maceration on the skins with daily punching down of the cap. When fermentation is almost complete, the tank is topped up and maceration continues for another two months. This traditional winemaking technique ensures good colour stabilisation and enhances the aromas and body of the wine. 10% of the wine is aged for 6 months in second-use barrels.
