Red vinification with natural yeast. Maceration with skins and daily immersion of the skins. When fermentation is almost complete, the tank is refilled and maceration continues for two months. This ancient winemaking technique allows for good stabilization of the color and enhancement of the aromas and body of the wine. 10% of the wine is aged for 6 months in second-year barrels.
