Tasting notes
Elegant and structured with an intense colour, a complex aroma and a wide range of scents that range from fruity notes to delicate and even floral secondary scents, complemented by spices, chocolate and butter. The evolution in the glass offers a continuous taste sensation. Extremely complex, it is an attractive wine with a great longevity.
Vinification
Vinification
This Barbaresco is the result of a careful selection of grapes from the Campo Quadro vineyard, located in the San Cristoforo subzone of Neive. Fermentation takes place spontaneously with indigenous yeasts and vinification follows special techniques. A tumultuous fermentation phase takes place with a completely submerged skin cap, after which the wine is briefly aged in new wood, followed by periods in barrels of different ages. This maturation is characterized by frequent blends, which give rise to a pleasant and balanced wood influence. The maturation period in wood is not fixed, but depends on the characteristics of the vintage and the product, and varies from a minimum of fifteen to even thirty-six months. Bottling takes place under favorable conditions, followed by a long bottle maturation, equal to the duration of the wood aging, before the wine is marketed.
